All our fragrances are crafted to deliver powerful sillage and remarkable longevity. Because we create Ultra-Gourmand™ perfumes, we use distinctive ingredients that require a longer maturation and maceration process than standard perfumery.
While most perfumes need about three weeks of maceration, ours require two to three months. The process begins with a two-week maturation, during which the perfume oils rest at a controlled temperature before alcohol is added. Then follows a minimum of six weeks of maceration, allowing the fragrance to reach its full depth and harmony.
We know you may be excited to wear your fragrance as soon as you receive it. However, this completely different formula and its unique ingredients may require a little patience. We understand this isn’t the most conventional approach, but it’s precisely what makes our creations unique, setting them apart from standard gourmand perfumes.
Even after bottling, your perfume may continue to evolve. You might notice slight variations in strength, but the olfactory profile remains the same. If this occurs, simply let your fragrance rest for a couple of weeks. Spraying it a few times after receiving it allows oxygen to enter the bottle and gently accelerates the maceration.
Most of our fragrances are fully matured before shipping, yet time will always enhance the richness of Ultra-Gourmand™ perfumes.
Each fragrance in our collection has its own exact concentration, ranging between 27% and 32%. This level is not chosen randomly, but precisely adjusted to achieve the perfect fragrance profile, while maintaining sillage and longevity at their finest.
For example, Le Gourmand at 31% concentration would not smell the same at 32% or 28%. Every tenth of a percent changes its balance, projection, and texture. That is why we state “Le Parfum” on the bottle, it represents the ultimate concentration, one that cannot be altered without changing the fragrance’s identity.
In our White Collection, the same meticulous process applies. However, we chose to label these creations as “Extrait de Parfum” to communicate their high oil concentration and exceptional richness. The term “Le Parfum” alone doesn’t clearly express this intensity, while “Extrait de Parfum” reflects our true level of concentration and craftsmanship.
To achieve this level of realism, we craft our fragrances in a completely different way. The acids we use to build many of our accords are complex to source in regular quantities, as they are originally intended for the aroma industry rather than perfumery. This makes it extremely difficult for any company to replicate our creations.
In addition, we work extensively with pyrazines, molecules that do not appear clearly in GC-MS analyses, the common method used to decode perfume formulas. This adds another layer of protection and complexity for anyone attempting to duplicate a Jousset Parfums fragrance.
It’s important to note that acids and pyrazines are not additives, are naturally occurring, and are completely safe for your health. They are also widely used in the food industry, found for example in coffee, cocoa, and roasted nuts. All our ingredients are used in precisely controlled concentrations and fully comply with international safety standards (IFRA), ensuring they are safe for daily use on skin. They are essential to achieving our Ultra-Gourmand™ fragrance profile, not something we include just to complicate our formulas.

Ultra-Gourmand™
While others were analyzing petals and molecules, we were busy tasting new pastries, trying to define what pleasure actually feels like. Because what people crave isn’t a formula. It’s a feeling of warmth, excess and pleasure.
In our world, there are no flowers on white tables. There’s butter, sugar, roasted vanilla, and the air of a bakery at 6 in the morning. We didn’t want to imitate nature. We wanted to bottle what makes life irresistible: a smell that provoke a reaction, a memory or a sudden hunger.
Ultra-Gourmand™ is a new category of perfumery. We replaced the traditional floral and woody approach with food-grade aromatic molecules such as pyrazines and natural acids, the same compounds responsible for the taste of coffee, caramel, nuts, and chocolate. These materials are extremely complex to work with and require months of maturation and maceration, far longer than conventional perfumes.
This process allows us to reach a depth, realism, and power of sillage that cannot be achieved by standard formulations. The result is a fragrance that feels alive, textured, and unmistakably human.
We didn’t create Ultra-Gourmand™ to please the mass market. We created it to redefine perfumery itself, to make it more real, more physical, and more connected to what pleasure truly is.
Every Jousset Parfums Ultra-Gourmand™ creation is developed by our in-house perfumer Jimmy Bodin and handcrafted in France in our own independent atelier. Not to prove craftsmanship, but because pleasure deserves intimacy.
